You'll need the following few ingredients:
- Dice the peppers. Cut leeks into thin circles.
For this dish I usually use white and light green parts of the leeks only, but dark green parts can also fit fine if young. Check this post for more info on leek greens.
- Put oil into a deep pan and add diced peppers. Heat over medium fire and cook, stirring occasionally, until peppers are half done. Stir in leeks and continue cooking until leeks have "melted" and reduced their volume and both vegetables are soft and tender. Season with some salt to taste.
- Meanwhile, beat eggs with a fork. Add a pinch of salt. Stir them into the pan once veggies are done and cook for a few more seconds until eggs are done.
